Welcoming in the New Year...

As a Mother, Wife, 9-5er and Entrepreneur, keeping on top of life can be challenging. A few months ago I figured I'd better find some ways to simplify the way we live. I love to cook and found that I needed to find ways to switch-up our daily food routine to keep it fresh and exciting. With the picky palettes I have to feed it was a big challenge!

Here are some tips for making feeding the family easier:

1. Create a Monthly Menu. Plan meals for the month. This is an awesome time saver and it takes some of the thinking out of the meal planning process. Go with a theme, to mix it up a bit we throw in an international and even a home-made fast-food night. Here's one that we use at my house...

2. Stock Pantry & Freezer. Keep the freezer and pantry stocked with stuff that the whole famliy loves. Beans, peas, pasta, pasta sauce, boneless chicken thighs and frozen vegetables all make meal time a cinch.

3. Double-up on meals. There is nothing like coming home after a hectic day and whipping something out of the freezer. Every now and then I make a few "freezer" ready meals that I can take from the freezer to the microwave to the table.

4. Get Creative. My oldest absolutely loves pizza, if it were her choice we'd have it every day. To appease her tastebuds I make her her pizza slices; sliced bread with tomato sauce and cheese...she loves it! Make life easy and try different things to keep the little ones happy.

5. Order In! Some may think it's the ultimate sin, but it's OK to cheat every now and again, especially if it helps maintain your sanity. Just try to opt for the kinda healthy stuff, go for Mexican or Caribbean, a lot less fried food; serving are usually generous and one meal will usually serve 2 people.
